Honey is a sustainable product, as bees are one of the main pollinators of insect plants, and beekeeping has a long tradition in Slovenia. Honey production is strongly seasonal (spring and early summer). Honey production is also affected by weather conditions (frost, prolonged periods of rain, or prolonged drought during the honey-making season).
At Jakobčič Beekeeping, honey is produced according to organic guidelines.
The forest honey of the Jakobčič Apiary is produced in the area of the Kolpa Landscape Park. Their forest honey contains a high proportion of chestnut honey, as there is a chestnut forest near the apiary. It also contains linden pasture and honeydew, as well as manna from other tree species and plants of the forest undergrowth, so it is not as distinctly bitter as chestnut honey would be. Forest honey is usually harvested at the end of June. It is the last honey to be poured, as it is necessary to leave some honey for the bee colonies to make them more resistant to disease.
The honey is not heated, so the enzymes and vitamins are preserved. This honey can partially crystallise.
The forest honey has been awarded the quality certification.
