Honey

By the old well, under the canopy of a mighty apple tree, my great-grandfather's beehive is like a wrinkled traveller from long ago. It was as if he were watching the growth of the nature-connected great-grandchildren whose imaginations he had stirred. The mystical lure of the bee has helped to revive the tradition. The new apiary was built from wood after a severe ice storm.

FLOWER HONEY The native Cranberry lavender is harvested from the flowers of meadows and other honey-bearing plants and herbs, and can therefore vary in colour from yellow to brown. The scent can be very varied, with an intense meadow and herb scent. It has a varied, full-bodied and sweet taste with various lingering aromas of meadow flowers, figs, raisins or cooked fruit.

ACACIA HONEY is harvested from the flowers of the blackberry or acacia. Acacia honey has an almost colourless to light yellow hue, a delicate fruity scent of acacia flowers, virgin wax, and cooked pears. It has an intensely sweet taste with a delicate, warm aroma of acacia flowers reminiscent of vanilla.

LINDEN HONEY is harvested from the flowers of trees in the lime family (linden, lime, small-leaved lime, and large-leaved lime), which can offer manna. Lime blossoms have many medicinal properties and are therefore harvested for tea. Linden honey is creamy white with a yellow or green tinge and has a characteristic strong smell of lime blossom. It may taste slightly less sweet than acacia and flower honey, and may be slightly bitter. The aroma of fresh menthol, linden blossom, and tea, and the aroma of fresh walnuts is overwhelming.

FOREST HONEY is harvested from plants in the forest and is mainly of manna origin, which is valued for its higher mineral content. The honey is light to dark brown with a reddish or greenish tinge, moderately intense in smell, and very varied, including tree resin. It has a medium-sweet taste, slightly bitter. The medium-intense aroma is reminiscent of tree resin, herbal syrup, hummus, and caramel.

CHESTNUT HONEY is harvested from the flowers of the chestnut tree. The honey may also be of manna origin. Chestnut honey is dark amber with a reddish tinge and an intense, pungent, and bitter smell of chestnut blossom. It has a medium-sweet to strong bitter taste. The characteristic pungent and very persistent aroma of bitterness, herbs, wormwood, dry wood, and crushed leaves distinguishes this type of honey from others.

The TKBZ Belokranjsko quality certificate was awarded to Čebelarstvo Muc for:
